Our tequila uses 100% lowland agave sourced from fields around Amititan. The pinas are roasted in brick ovens before being crushed in mechanized rolller mills. Fermented in wooden vats with open tops without the agave fibers before being distilled twice in small cooper pot stills. Aged 6 months in ex hand charred French Cabernet
